Ingredients:
~ 1 1/2 lbs of top sirloin chopped up in bite-sized pieces
~ 1 1/2 cups of barley
~ 6 cups of beef broth
~ 2 tsp. of Italian Seasoning
~ 1 can (16 oz) Tomato Sauce
~ 2 tsp. Basil
~ 1 chopped onion
~ 1 bag of mixed veggies
~ 1 Bay Leaf
Method:
~ Brown the meat and add chopped onions in pan.
~ Boil 6 cups of beef broth and add Italian Seasoning, Basil, Bay Leaf, tomato sauce and meat and onion mix. Boil for 30 minutes.
~ Then add the Barely and simmer for 50-60 minutes.
~ Cook your mixed veggies and then add to pot and simmer for an additional 15 minutes.
I usually fix corn bread muffins to go with it. It not only tastes great but it fills your home with a wonderful 'winter-like' smell of grandma's house! Enjoy!

It's so easy! You pretty much just throw everything in and let it cook. And seriously it smells wonderful! My oldest just can't get enough of it and that's great b/c she doesn't really like some of the veggies in it. Good luck and let me know if you try it!
