Fiesta Ranch dip in an orange pepper!
Chicken Gyro
So tonight I wanted something different so I choose to make a Greek meal...it was wonderful! I made chicken Gyro, Felafyl (sp?) and a fiesta dip. Ok...I know fiesta dip isn't Greek but my hubs is Mexican so I had to throw something Mexican in there. lol I looked around for the wonderful cucumber ranch dip that they put on the gyros but couldn't find it anywhere so I decided I would experiment and make my own. I was pleasantly surprised that it turned out as well as it did seeing as how it's the first time I've ever tried to make it. So to those of you who love Greek food as much as I do and want to make this meal for your family some night here is what I did.
Got some chicken that was pre-grilled and threw them in the oven while I started my dressing and dip. For the dressing I took 3/4 of a cucumber and sliced it and then mixed it in a mixer with 2 heaping teaspoons of sour cream and about 1/2 cup of Cucumber Ranch dressing. (I should have added a little garlic but didn't think of it in time.) Then I placed it in the fridge so it could thicken a little. Then I started my fiesta dip which was just a Hidden Valley Fiesta Dip packet, pretty easy! I sliced up 1 red pepper, 1 orange pepper and a cucumber for the dip and put it into a hollowed out orange pepper for decoration. My kids also love to dip pretzels in it! Then I put that in the fridge to thicken and started on the flafyl (if anyone knows how to spell that word please let me know! lol). I bought a packet and it was easy-smeasy! All you do is add water to the mix, roll it into little balls and fry it in a pan of hot oil!
Then comes the gyro...my favorite part! I took a pita and placed it in the bottom of the dish, added some lettus, sliced the chicken and placed it on top, then I sprinkled some Feta cheese along the rim of the bowl for decoration and on top of the chicken and then just poured some of the cucumber dressing on the top. Voila! You're done! I have to say that for my first time ever fixing a Greek meal it turned out wonderful! My husband, who is a WONDERFUL cook, said he liked it better than the Greek restaurant that we go to sometimes. And no, he's not just saying that to get some desert if you know what I mean! lol He honestly loved it! Yeah for me!!! :)
